INGREDIENTS
FOR THE FILLING:
- 5 Fuji apples, peeled and cut into even, small slices
- 1 orange, zested and juiced
- 1/4 cup brown sugar
- 2 tablespoons raw honey (opitional...omit if vegan)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
FOR THE TOPPING:
- 2 cups of SACRED COW GRANOLA
- 4 tablespoons melted coconut oil
- 2 tablespoons flour
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- Pinch salt
INSTRUCTIONS
- Preheat the oven to 350 degrees.
- Make the filling. Peel and quarter the apples and cut into thin, even slices. Combine the apples, orange zest and juice, brown sugar, honey (if using), cornstarch, vanilla, nutmeg, and cinnamon. Pour into a baking dish.
- Bake in the oven, uncovered, for 25 minutes.
- Meanwhile, make the topping. Stir the Sacred Cow Granola with the coconut oil, flour, brown sugar, salt, and cinnamon. Sprinkle the granola topping on the fruit after 25 minutes of baking. Bake for 20-25 minutes more, until the fruit filling is bubbling and the granola is nicely browned.*
- Top with your favorite vanilla ice-cream, if you wish!
NOTES
*If the granola topping is browning too much before the crisp is cooked, simply cover with foil.
